"Please ask this artist how he creates such remarkable paintings with just a few strokes," the traveler directed his guide and interpreter. When asked, the master answered so curtly that the traveler assumed he had said, "don't bother me now." Not so. said the guide. "The old man explains that he looks at the fishes." In a similar spirit, Chef Joseph Lewis regards the ingredients that go into his dishes - their forms, flavors, textures, aromas, essence and potentials - and transforms them by means of techniques that may be as simple, yet masterful, as that brush-painter's strokes.
